Multi-brand kitchen
virtual brand · dark kitchen · cloud kitchen · ghost kitchen
A multi-brand kitchen is one kitchen that cooks and sells under several brand names at once from a shared line, shared stock and one team. Often these are virtual brands that exist only on delivery platforms.
Brands, not categories
The trap is to model a brand as a prefix on the menu. It then has no revenue of its own, no menu of its own, and no way for one order to carry two brands. Done properly, brand is a dimension stamped on every order line, so a burger brand and a dessert brand can share one ticket, one bag and separate reporting.
One kitchen, many storefronts
Each brand has a storefront on each delivery platform; every order lands in the same kitchen with the brand on the ticket. Items route to stations by what they are, so five brands share the fryer without five fryer screens. A bag slip per order names the brand and the platform reference so the courier takes the right bag.
Reporting that keeps them apart
Revenue, item mix and kitchen times are reported by brand and by channel, because the operator's question is which brand earns on which platform at which hour, not what the kitchen did in total.
How Brindola does it
Brand is a first-class dimension: a tab and a menu per brand, one order carrying lines from two brands, routing by item, a bag slip on bump, and revenue and item reporting split by brand and channel. Orders for every brand from Bolt Food and Glovo land on one kitchen screen, each ticket in its brand's colour, with no platform tablets; Wolt is coming soon. It is the venue the product was designed around.
