A cook working a row of pans on the line of a commercial kitchen

POS for dark kitchens and virtual brands

The dark kitchen POS where five brands cook on one line and are counted five ways

Brindola is a POS for dark kitchens, cloud kitchens and virtual brands that runs several brands out of one kitchen, with separate menus and one kitchen screen. Orders for every brand from Bolt Food and Glovo land on that screen as ordinary tickets, brand by brand, with no platform tablets; Wolt is coming soon. It reports revenue by brand and by channel, and nothing depends on the internet except the orders arriving.

What a dark kitchen needs from its system

Brands as a first-class dimension

A brand is stamped onto every line instead of being prefixed onto a category. Each brand has its own tab, its own menu and its own name on the ticket and the slip, and one order can carry lines from two brands.

One kitchen screen for Bolt Food and Glovo

Orders from every platform arrive through our order bridge as ordinary orders: accepted on the terminal with a prep time, on the kitchen screen beside the last one, cancellations caught, in the close without re-typing. No tablet per platform on the counter. Wolt is coming soon.

Routing by item, not by brand

Five brands share the fryer. Items route to stations by what they are; the pass screen groups an order across stations so the bag is complete before the courier is called.

A bag slip per order, the moment it is ready

The slip prints automatically with the brand's name, the order number and the platform reference. The courier takes the right bag first time.

Revenue by brand, by platform, by hour

Which brand earns, on which platform, at which hour; kitchen times in percentiles so the slow station is a fact. Closed days are gaps.

A line drop that costs nothing already cooking

Orders already in the kitchen keep moving on your own network. New platform orders queue at the bridge and land the moment the line is back.

Dark kitchens in Georgia

Three brands out of one kitchen, on Bolt Food and Glovo today and on Wolt soon. Every order shows on one kitchen screen, each brand is counted on its own, and the night ends with one close.

A dinner peak, through Brindola

One kitchen, three virtual brands, two delivery platforms, a kitchen screen per station and a pass screen by the door.

  1. The orders start landing at seven

A burger-brand order from one platform and a poke-brand order from another arrive within a minute. Both are accepted with a prep time in one tap; both are on the kitchen screen with the brand on the ticket.

  2. The stations cook what they cook

The burger goes to the grill, the poke to the cold station, the fries for both to the fryer. Each station sees its own items; the pass sees the whole order.

  3. A cancellation is caught

The platform cancels the poke before it is plated. The ticket is pulled from the cold station and the cancellation is in the day's numbers as exactly that.

  4. The bag slip prints

The pass bumps the burger order; the slip prints with the brand, the number and the platform reference. The courier is on the way.

  5. The line drops at nine

The eleven orders in the kitchen keep moving. Four new ones queue at the bridge and land three minutes later when the connection returns, with their timestamps intact.

  6. The close

Revenue split by brand and by platform, the item mix per brand, kitchen times by station. The aggregate goes to the backoffice; the detail stays on the main device in the kitchen.

Which plan fits a dark kitchen

Plus, with the delivery add-on. Several kitchen screens, a pass and the order bridge are the shape of a dark kitchen. An operator running kitchens in several cities on its own backoffice is Enterprise.

Questions dark kitchens ask

Can orders from Bolt Food and Glovo for several brands go to one kitchen screen?

Yes. The order bridge connects to Bolt Food and Glovo, and every order from each of them, for every brand you run, lands on the same kitchen screen. Each ticket wears the platform's mark and its brand's colour, its items route to the station that cooks them, and the order is accepted with a prep time on the terminal, so there is no platform tablet to watch. Wolt, Deliveroo, Uber Eats, talabat, foodpanda and foodora are coming soon. The platforms in your market are named on your country's page.

Can one order carry two brands?

Yes. Brand is a dimension of the line, not of the order, so a customer who orders a burger from one brand and a dessert from another gets one ticket, one bag and revenue counted to each brand.

Does each brand need its own terminal?

No. One main device in the kitchen serves every screen. Brands are tabs on the same terminal and the same kitchen screen; only the reporting keeps them apart.

Where does the order data live?

On the main device in your kitchen, in a file you can copy. Only the aggregate close leaves, and only to a backoffice you connected.

Other kinds of venue

POS for restaurants

Restaurants

Brindola is a restaurant POS that runs a full table-service operation on the venue's own hardware and network: every terminal, the floor plan, the kitchen screens, the payments and the close. A dead line changes nothing on the floor.

POS for coffee shops and cafés

Coffee shops

Brindola is a POS for coffee shops and cafés that takes the morning rush at the counter: drinks with their sizes and milks, the pastry case, a name or a number for pickup. It runs on a terminal that keeps working when the internet does not.

POS for bars and pubs

Bars and pubs

Brindola is a POS for bars and pubs that keeps open tabs, pours by the round, splits the bill at two in the morning and still books it to the right trading day. It runs on hardware behind your own bar and does not depend on the internet.
